Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cook the egg noodles according to the package instructions until al dente. Drain and set aside.
  3. In a large skillet, brown the ground beef over medium heat. Add the chopped onion and cook until translucent. Season with salt and pepper.
  4. Stir in the cream of mushroom soup and milk. Mix well until combined.
  5. Add the cooked noodles and frozen mixed vegetables to the skillet. Toss everything together gently.
Baking
  1. Layer the mixture in a greased casserole dish. Top with shredded cheddar cheese, generously.
  2. Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
  3. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
  4. Garnish with fresh parsley if desired and serve warm!
