  • 1 cup ricotta cheese Use fresh ricotta for best results.
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Optional Ingredients
  • 1/2 cup chocolate chips Optional; fold into the batter if desired.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, combine the ricotta cheese, sugar, and eggs. Mix well until smooth.
  3. Stir in the vanilla extract. Make sure everything is thoroughly combined.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Slowly add the dry ingredients to the wet mix, blending until just combined. Fold in the chocolate chips if using.
  6. Pour the batter into the prepared cake pan and smooth the top.
Baking
  1. Bake in the preheated oven for about 35 minutes, or until a toothpick comes out clean.
  2. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Serving
  1. Dust with powdered sugar or serve with fresh fruit as desired.

Notes

For best results, use fresh ricotta and avoid overmixing the batter. To enhance flavor, add a teaspoon of orange or lemon zest.
