Preparation
- Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In one bowl, separate the egg whites from the yolks. Beat the egg whites with an electric mixer until they reach stiff peaks (about 2-3 minutes).
- In another bowl, combine the cottage cheese, egg yolks, almond flour, baking powder, and salt. Mix until it forms a smooth batter.
- Gently fold the egg whites into the cottage cheese mixture, being careful not to deflate them.
- Using a tablespoon, drop spoonfuls of the batter onto the prepared baking sheet, creating cloud shapes.
Baking
- Place in the oven and bake for 25-30 minutes, or until the tops are golden brown.
- Remove from the oven and let cool slightly before serving.
Notes
Serve with a fresh green salad, as a sandwich base, or with butter and jam. For breakfast, pair it with scrambled eggs or creamy soup.
