Preparing the Casserole
- Preheat your oven to 375°F (190°C).
- Peel and cube the butternut squash. Steam or boil it until fork-tender. Drain and set aside.
- In a skillet over medium heat, cook your choice of sausage until browned and cooked through. Remove and set aside.
- In the same skillet, add a drizzle of olive oil. Sauté the onion and garlic until translucent and fragrant, about 5 minutes.
- In a large bowl, combine the cooked sausage, steamed squash, diced apples, sautéed onion and garlic, thyme, salt, and pepper. Mix until everything is evenly coated.
- Transfer the mixture to a greased casserole dish. Top with shredded cheese.
- Cover the dish with foil and bake for 25 minutes. Then, remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving. Enjoy your delightful creation!
Notes
Consider side dishes like a simple salad or steamed green vegetables. Can also serve with crusty bread or a light soup. For beverages, chilled apple cider or white wine pair well.
