  • 1 medium butternut squash, peeled and cubed
  • 1 pound cooked and crumbled sausage Your choice of sausage
  • 2 medium apples, peeled and diced Tart varieties like Granny Smith work great
  • 1 cup shredded cheese Cheddar or your favorite cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon thyme Fresh or dried
  • Salt and pepper to taste
  • Olive oil for sautéing

Method
 

Preparing the Casserole
  1. Preheat your oven to 375°F (190°C).
  2. Peel and cube the butternut squash. Steam or boil it until fork-tender. Drain and set aside.
  3. In a skillet over medium heat, cook your choice of sausage until browned and cooked through. Remove and set aside.
  4. In the same skillet, add a drizzle of olive oil. Sauté the onion and garlic until translucent and fragrant, about 5 minutes.
  5. In a large bowl, combine the cooked sausage, steamed squash, diced apples, sautéed onion and garlic, thyme, salt, and pepper. Mix until everything is evenly coated.
  6. Transfer the mixture to a greased casserole dish. Top with shredded cheese.
  7. Cover the dish with foil and bake for 25 minutes. Then, remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
  8. Let it cool for a few minutes before serving. Enjoy your delightful creation!

Notes

Consider side dishes like a simple salad or steamed green vegetables. Can also serve with crusty bread or a light soup. For beverages, chilled apple cider or white wine pair well.
