Ingredients
  

For the Stuffing
  • 1 cup lump crab meat Fresh crab yields the best flavor.
  • 1 cup shrimp, chopped Use fresh or thawed shrimp.
  • 1/2 cup cream cheese, softened Cream cheese should be at room temperature.
  • 1/4 cup mayonnaise
  • 2 tbsp fresh dill, chopped Can substitute with other herbs.
  • 1 tbsp lemon juice Freshly squeezed preferred.
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • to taste salt
For the Salmon
  • 2 pieces salmon fillets, approximately 6 oz each Select fillets with skin on.
  • to drizzle olive oil
  • for serving lemon wedges For a fresh splash of zest.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) to prepare for baking your salmon.
  2. In a bowl, combine the crab meat, chopped shrimp, cream cheese, mayonnaise, fresh dill, lemon juice, garlic powder, black pepper, and salt. Mix until well incorporated.
  3. Place the salmon fillets skin-side down on a baking sheet lined with parchment paper. Using a sharp knife, carefully create a pocket in each salmon fillet by cutting a slit along the side, but not all the way through.
  4. Gently spoon the crab and shrimp mixture into the pockets of each salmon fillet, packing it in nicely.
  5. Lightly drizzle olive oil over the stuffed salmon and sprinkle with additional black pepper.
Cooking
  1. Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
  2. Remove from the oven and let it rest for a few minutes. Serve with lemon wedges.

Notes

For perfect salmon, check doneness a few minutes early to prevent overcooking. Serve with a crisp salad, roasted asparagus, or garlic mashed potatoes for a complete meal.
