Pasta
  • 12 ounces spaghetti Use any type of pasta you prefer.
Sauce Ingredients
  • 4 tablespoons unsalted butter Can substitute with olive oil for a lighter option.
  • 3-4 cloves garlic, minced More garlic can be added for a stronger flavor.
  • 1 cup heavy cream For a lighter option, use half-and-half.
  • 1 cup grated Parmesan cheese Pecorino Romano can be used as a substitute.
  • 4 large eggs Beaten well before adding to the sauce.
  • to taste Salt and pepper Adjust according to preference.
  • to taste Fresh parsley, chopped For garnish.

Method
 

Cooking the Pasta
  1. In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package directions until al dente.
  2. Reserve about 1 cup of pasta water, then drain the pasta.
Preparation of Sauce
  1. In a skillet over medium heat, melt the butter.
  2. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Stir in the heavy cream and bring to a gentle simmer.
Combining Ingredients
  1. Reduce the heat and gradually whisk in the Parmesan cheese until melted and smooth.
  2. In a bowl, beat the eggs, then slowly combine them with the creamy sauce while whisking continuously to avoid scrambling.
  3. Add in the cooked pasta and toss to coat evenly in the sauce.
  4. Season with salt and pepper to taste.
Serving
  1. Garnish with fresh parsley, and enjoy your flavorful dish!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat slowly in a pan over low heat, adding a splash of milk or cream if needed.
