  • 4 pieces boneless chicken breasts
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning

Method
 

Preparation
  1. Spray the inside of your Crock Pot with non-stick cooking spray for easy cleanup.
  2. Place the boneless chicken breasts at the bottom of your Crock Pot.
  3. In a separate bowl, combine the chicken broth, heavy cream, chopped sun-dried tomatoes, minced garlic, Italian seasoning, salt, and pepper. Stir well to mix all ingredients.
  4. Pour the cream mixture over the chicken breasts in the Crock Pot, ensuring they are completely covered.
Cooking
  1. Set your Crock Pot to low and let it cook for about 6 hours or on high for about 3 hours.
  2. About 30 minutes before serving, stir in the grated Parmesan cheese. Cover to allow it to melt into the sauce.
  3. Once cooked, garnish with fresh parsley and serve warm!

Notes

For added flavor, include fresh herbs like basil or thyme. To lighten the dish, replace heavy cream with Greek yogurt or low-fat sour cream added at the end. Substitute chicken breasts with thighs or tofu for a vegetarian version.
