Main Ingredients
  • 2 cups fresh spinach, chopped Use fresh spinach for the best flavor.
  • 1 cup cottage cheese, drained Can substitute with ricotta or Greek yogurt.
  • 4 large eggs Ensure eggs are room temperature for fluffiness.
  • 1 cup shredded cheddar cheese Can use cheese of your choice.
  • 1/2 cup milk Whole milk recommended for creaminess.
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon garlic powder Optional for added flavor.
  • 1/4 cup chopped onion Optional; sauté with spinach.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté the chopped onion (if using) until translucent. Add the chopped spinach and cook for a couple of minutes until wilted.
Mixing Ingredients
  1. In a large mixing bowl, combine the cottage cheese, eggs, milk, salt, pepper, and garlic powder. Whisk until well blended.
  2. Stir in the sautéed spinach mixture and shredded cheese until evenly distributed.
Baking
  1. Pour the entire mixture into a greased 9-inch pie dish or oven-safe skillet.
  2. Bake in the preheated oven for 35-40 minutes or until the center is set and lightly golden on top. A toothpick inserted in the center should come out clean.
  3. Allow the quiche to cool for about 10 minutes before slicing it into wedges.

Notes

Pairs well with a mixed green salad or fresh fruit. For brunch, serve alongside mimosas or coffee.
