Preparation
- In a large bowl, combine pineapple juice, soy sauce, minced garlic, grated ginger, and brown sugar to prepare the marinade.
- Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
- If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
- Thread the marinated chicken onto the skewers, alternating with pieces of bell pepper, red onion, and fresh pineapple.
Grilling
- Preheat the grill to medium-high heat.
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is thoroughly cooked (internal temperature should reach 165°F).
- Once grilled to perfection, remove the skewers from the grill and serve immediately.
Notes
For deeper flavor, marinade the chicken overnight. For a juicier bite, use chicken thighs. You can also substitute with shrimp or firm tofu for a vegetarian option.
