Preparation
- In a large pot, bring water to a boil and add the diced potatoes. Cook until tender, about 15-20 minutes. Drain and return them to the pot.
- Using a potato masher, mash the potatoes until smooth.
- Fold in sour cream, cream of mushroom soup, 1 1/2 cups of shredded cheddar cheese, and the sliced green onions. Mix until everything is well combined.
- Add salt and pepper to taste.
Baking
- Spoon the potato mixture into a greased baking dish and spread it evenly.
- Sprinkle the remaining cheese and fried onions on top.
- Preheat your oven to 350°F (175°C) and bake for 25-30 minutes or until bubbly and golden brown.
- Allow it to cool for a few minutes before serving. Grab a spoon, and dig in!
Notes
For perfecting the dish, consider adding cooked bacon bits, shredded chicken, or sautéed vegetables. If storing, keep in an airtight container for up to 4 days in the refrigerator or freeze for up to 3 months.
