Ingredients
  

Main Ingredients
  • 2 lbs potatoes, peeled and diced Use starchy potatoes like Russets for optimal texture.
  • 1 cup sour cream
  • 1 can cream of mushroom soup (10.5 oz)
  • 2 cups shredded cheddar cheese, divided Use some for the mixture and save some for topping.
  • 1 cup green onions, sliced
  • 1/2 cup fried onions, for topping
  • Salt and pepper, to taste

Method
 

Preparation
  1. In a large pot, bring water to a boil and add the diced potatoes. Cook until tender, about 15-20 minutes. Drain and return them to the pot.
  2. Using a potato masher, mash the potatoes until smooth.
  3. Fold in sour cream, cream of mushroom soup, 1 1/2 cups of shredded cheddar cheese, and the sliced green onions. Mix until everything is well combined.
  4. Add salt and pepper to taste.
Baking
  1. Spoon the potato mixture into a greased baking dish and spread it evenly.
  2. Sprinkle the remaining cheese and fried onions on top.
  3. Preheat your oven to 350°F (175°C) and bake for 25-30 minutes or until bubbly and golden brown.
  4. Allow it to cool for a few minutes before serving. Grab a spoon, and dig in!

Notes

For perfecting the dish, consider adding cooked bacon bits, shredded chicken, or sautéed vegetables. If storing, keep in an airtight container for up to 4 days in the refrigerator or freeze for up to 3 months.
