Ingredients
  

Pasta and Vegetables
  • 12 ounces your favorite pasta (spaghetti, penne, or farfalle)
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, sliced (red, yellow, or green)
  • 1 cup zucchini, sliced
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
Cooking Essentials
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • ½ cup Parmesan cheese, grated (optional)
  • Fresh basil leaves, for garnish (optional)

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Sauté the Vegetables
  1. In a large skillet, heat olive oil over medium heat. Add the minced garlic and cook for about a minute until fragrant.
Combine Ingredients
  1. Toss in the sliced bell peppers, zucchini, and broccoli. Sauté for approximately 5-7 minutes until the vegetables are tender but still vibrant.
  2. Add the cooked pasta and cherry tomatoes to the skillet, tossing everything together gently.
Season and Serve
  1. Season with salt and pepper to taste. If desired, sprinkle with Parmesan cheese and toss for added creaminess. Serve warm, garnished with fresh basil leaves!

Notes

For veggie variations, mix and match based on seasonal availability. Be careful not to overcook the pasta or vegetables for optimal texture. If using frozen veggies, thaw and drain them before cooking.
