  • 2 pounds beef chuck, cut into bite-sized cubes Opt for chuck roast for tenderness.
  • 1 pound baby potatoes, halved or quartered
  • 1/2 cup unsalted garlic butter Melt before adding.
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish chopped Adds freshness and color.

Preparation
  1. Start by cutting the beef into bite-sized cubes and halving the baby potatoes. Chop the onion and mince the garlic.
Cooking
  1. Place the beef, potatoes, onion, and garlic into the slow cooker.
  2. Add thyme, paprika, and season with salt and pepper. Stir everything together to ensure the ingredients are evenly coated.
  3. Melt the garlic butter (you can do this in the microwave) and pour it over the beef and potatoes, making sure it covers everything.
  4. Cover the slow cooker and set it on low for about 6 to 8 hours or high for 4 to 5 hours until the beef is tender and the potatoes are cooked through.
  5. Once cooked, give it a good stir, and garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Freeze portions for up to 3 months. Reheat in a saucepan over medium heat.
