Preparation
- Start by cutting the beef into bite-sized cubes and halving the baby potatoes. Chop the onion and mince the garlic.
Cooking
- Place the beef, potatoes, onion, and garlic into the slow cooker.
- Add thyme, paprika, and season with salt and pepper. Stir everything together to ensure the ingredients are evenly coated.
- Melt the garlic butter (you can do this in the microwave) and pour it over the beef and potatoes, making sure it covers everything.
- Cover the slow cooker and set it on low for about 6 to 8 hours or high for 4 to 5 hours until the beef is tender and the potatoes are cooked through.
- Once cooked, give it a good stir, and garnish with fresh parsley before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Freeze portions for up to 3 months. Reheat in a saucepan over medium heat.
