Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
Wet Ingredients
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 tablespoon coffee liqueur (optional)
  • ½ cup mascarpone cheese
For Dusting
  • to taste cocoa powder for dusting before serving

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In another large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the egg, vanilla extract, and coffee liqueur (if using) until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the mascarpone cheese gently until the mixture is smooth and creamy.
Baking
  1. Drop rounded tablespoons of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake in the preheated oven for 10-12 minutes or until the edges are set but the centers are slightly soft.
  3. Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  4. Once cooled, dust with cocoa powder before serving.

Notes

For best results, use fresh mascarpone cheese. Adjust coffee flavor to your preference by adding more coffee liqueur or instant coffee. Monitor baking time closely to maintain softness.
